100% Chenin Blanc. Baudry’s rare Chinon Blanc hails from two small parcels: 0.8 hectares of vines behind the Château de Sonnay (these propagated with cuttings from the vineyards of Domaine Huet); and the eroded limestone of Le Clos Guillot. Vine age is in the 12 to 15 year ballpark. Matthieu Baudry naturally ferments the wine slowly in old 500- and 600-litre barrels until it’s dry less than two grams of residual sugar and lets full malolactic go through, although the wine remains fresh and energetic.
