2021 Flametree Rose, Margaret River

Both batches were machine harvested in the cool of early morning. The Tempranillo was transferred directly to press retaining a large percentage of whole berries whilst the Shiraz was crushed and chilled before being transferred into the press. With the Tempranillo rotated the press a few times and then the grapes sat for three hours releasing flavour and tannins from the skins. With the Shiraz, and used just the free-run juice in the blend.  The Tempranillo pressings were fined, wild fermented in old oak and then used in the final blend for texture and weight. Both ferments were kept cool to preserve the fruit flavours and freshness. 

A distinctive pale salmon colour. Aromas of red currents overlay subtle floral, cherry and cranberry characters. The fruit flavours are a little more obvious and forward in this lovely early drinking vintage, the difference between using Tempranillo and Pinot Noir as Rose material. The palate however is deliberately savoury and textured, a result of wild ferments in old barrels and 4 months on yeast lees. The palate has moderate weight, soft chalky tannins and a dry finish. A wonderful wine to enjoy at a picnic, dinner party or day at the beach. Pairs perfectfully with olives, cured meats and crusty bread.
