Whole bunch pressed, shortly settled before wild ferment in seasoned (second and third year) oak, Partial Malolactic fermentation, and eight months on Lees. Yellow stonefruit, ripe citrus on the nose. The palate is tight and linear at this stage with great acidity and fine mineral coming through at the finish.

Bright yellow with slightly golden hue. Open and inviting nose, medium intensity, ripe mango and pineapple, yellow stone fruit (peach), salted caramel. Fresh acid attack, medium bodied. Lengthy finish on oak aromatics.
Pair it with fish in sauce, terrine, asparagus.
