This superlative wine comes from a complex ageing process. It starts life as the finest Fino-designate wine, ageing over a decade under a layer of yeasty flor in seasoned American oak barrels. Upon promotion, it goes on to spend many further decades passing through the Amontillado Criaderas and Soleras.
It demonstrates unsurpassed pungency, complexity, intensity, salinity, length and dryness. Possible pairings are nuts, shellfish and spicy, mature cheeses or bisque.
This pure uncompromising wine is not blended, caramelized, fined, or filtered. Amontillado Tradicion: limited production, unique quality.

Storage: If the bottle is unopened, this wine will remain in perfect condition and even improve with time. Once the bottle has been opened, the wine will remain in perfect condition for up to 12 months, as long as it is kept in the vertical position.
