When you combine fruit power with this kind of complexity, and add finesse to the equation, then you go straight into the elite class. This drives home its case with flavours of peach, nougat, flint and a variety of barrel-worked complexities. One sip and you feel caught in its headlights; there's so much going on, it’s hard not to become fixated.

Named after the geological epoch that shaped many of the world's great limestone soils, Eocene represents the pinnacle of Chardonnay at Scorpo. The family has established itself as one of the Mornington Peninsula's quiet achievers, producing wines of precision and site expression from their meticulously managed vineyard in Merricks North. Inspired by the great white wines of Burgundy but unmistakably Mornington in character, Eocene has earned a reputation as one of Australia's most compelling cool climate Chardonnays.

The vineyard's ancient soils and maritime climate provide ideal conditions for Chardonnay, with cooling breezes from Western Port Bay extending the growing season and preserving natural acidity. The exceptional 2015 vintage delivered fruit of remarkable concentration and balance, and careful barrel fermentation with extended lees maturation has allowed the wine to develop impressive complexity while retaining freshness and energy.

Bright gold in colour with only the faintest signs of maturity, the bouquet is beautifully layered with aromas of white peach, preserved lemon and ripe nectarine alongside notes of roasted hazelnut, nougat and brioche. As the wine opens, hints of struck flint, honey and citrus curd emerge, adding further intrigue. The palate is richly textured yet wonderfully poised, delivering flavours of stone fruit, lemon peel and baked apple wrapped around a fine mineral backbone. The years in bottle have brought additional depth and harmony, while vibrant acidity carries the wine to a long, savoury and beautifully persistent finish.

This is a magnificent partner for roast lobster with herb butter, scallops with cauliflower purée, roast chicken with tarragon, mushroom and thyme risotto or a rich seafood pie. Drinking beautifully now, it still possesses the balance and structure to reward further cellaring for those with patience and discipline.
