The 1954 Amontillado is one of the singular wines with a wooden label. It has a mahogany color and a very volatile nose with pungent notes of low tide, seaweed, rusty nails and old wood. It has characteristics of a very old wine, similar to other styles, even some rancio wines. It has an explosive palate with volatility that makes you salivate (it has 10 grams of acidity too), dense and concentrated with reminiscences of seawater, hazelnuts, peat and old Cuban cigars and a salty and bitter finish. It's a wine for sipping rather than drinking, on the verge of being painful. There are 2,750 hand-numbered bottles of this wine. It was bottled in October 2023.

From the oldest reaches of the Toro Albalá cellars, this 1954 Amontillado Convento Selección has spent decades slowly transforming, beginning life under flor before moving into long oxidative ageing. Founded in 1922, the estate has become a master of these extended solera styles, where time builds layer upon layer of complexity without losing precision.

The aromatics are beautifully evolved and constantly shifting. Roasted almond, hazelnut and dried citrus peel lead, followed by chamomile, tobacco leaf and a hint of spice. With this level of age, deeper notes emerge, antique wood, polished leather and a refined rancio character that adds savoury depth without heaviness. There is also a gentle saline lift that keeps everything bright.

It carries itself with quiet intensity. Bone dry, yet rich and textural, with a silky feel that coats without weighing down. Flavours of toasted nuts, caramel, orange oil and spice unfold gradually, held together by a fine line of freshness. The finish lingers with a nutty, savoury edge and a faint bitterness that keeps drawing you back.

This is a wine that invites thoughtful pairing. Jamón ibérico is a natural, but it’s just as compelling with aged cheeses, roasted almonds or something like a slow cooked onion tart. It also works beautifully with dishes like grilled mushrooms or artichokes, where its savoury depth really connects.

Fully mature and holding beautifully, it will continue to drink well for years once opened if stored correctly.

There is a quiet authority here, a wine shaped by decades, offering depth, elegance and a remarkable sense of place.
