The Geoff Merrill wine making philosophy has been and always will be, to make wine that allows regional, varietal and vintage expression, without excessive
winemaker intervention. Great wine is a matter of balance and our passion for subtle, elegant and harmonious flavours in wine is well documented.
This Cabernet Sauvignon has a wonderfully expressive varietal aroma while the blend of McLaren Vale and Coonawarra highlights the best aromas and flavours that Cabernet has to offer - peppermint, violets, chocolate, leather, black olive and menthol with oak influenced toasty vanilla. It is medium bodied with a generous mouth feel and a long finish. Ideal with roasted or grilled lamb
Geoff Merrill - Winemaker:
‘Brick red colour. Clean Chocolate. Lifted Fruit, Some Leather. Primary Herbaceous Coonawarra fruit evident. Lifted cigar box palate acid balanced. Tannins in place. Very European. Great. Drink with food over 2.5 hours, longer than that loses edge.’ Tasted July 2015.
