P2 is the acronym for the Plénitude 2 series, Dom Pérignon’s second life. It indicates that bottles are kept by the house to let them age on the lees and to obtain different expressions of the same wine throughout its life, letting time work its magic and thus acquiring additional complexity. This year, Dom Pérignon’s cellar master, Vincent Chaperon, decided to release the 2004 vintage. ‘2004 was a contrast to 2003,’ he said. After rain in January, the spring was hot and sunny, like the beginning of summer. But the summer was wet, with 50% more rain than in an average year. Despite this, the health of the grapes was stable and the crop was abundant. ‘This is quite a perfect vintage,’ he added. The bouquet impresses with its finesse and elegance, its delicate aromas of pastry, orchard fruit, nuts, and lemon oil, and both iodine and chalky hints with air. The palate is medium- to full-bodied, very charming, with a sappy texture, racy acids, and a long and lingering finish. This is a very harmonious and rather chalky Dom Pérignon, which must be approached in its singularity. Time is a real asset here. Dosage: 5g/L.

It unfurls a complex, deep bouquet of smoke, ripe orchard fruits, mango, exotic fruits and spices. Medium to full-bodied, rich and expressive, it’s harmonious and enveloping and has gained structure and tension compared to the initial 2006 Dom Pérignon, while the palate is perfectly balanced with delicate gastronomic bitterness and chalky dry extracts that contribute to its long, mineral-driven finish. It should go well with delicate fare. Dom Pérignon P2 2006 represents the second life of one of Champagne’s most iconic wines. P2, or “Plénitude Deuxième,” is released after extended ageing on lees—around 15 years for this vintage—allowing the wine to enter a new stage of evolution where greater intensity, energy, and layered complexity emerge. 2006 was a warm, generous vintage in Champagne, marked by a hot July and a cooler, damp August, before perfect harvest conditions delivered ripe, concentrated fruit. The original 2006 Dom Pérignon was released in 2015; the P2 edition reflects the same wine after nearly a decade more lees ageing, bringing out a striking balance of power, precision, and vibrancy.

In the glass, it gleams a radiant gold with bright green reflections, a sign of both maturity and freshness. A stream of ultra-fine, persistent bubbles rises elegantly, forming a delicate, creamy mousse. The nose is intense and multi-layered, offering aromas of lemon oil, ripe stone fruits, green mango, toasted brioche, roasted almonds, honeycomb, white flowers, and chalk. Subtle smoky and iodine notes add depth, hinting at the long lees ageing. On the palate it is electric yet rich, with layers of citrus, orchard fruit, and spice framed by a vibrant mineral core. The texture is both creamy and tensile, the acidity perfectly integrated, driving through to a long, saline, chalk-infused finish of incredible precision.

The blend is approximately 54% Chardonnay and 46% Pinot Noir, sourced exclusively from Grand Cru vineyards and the Premier Cru of Hautvillers. Extended lees ageing of around 15 years in Dom Pérignon’s chalk cellars gives the wine its amplified expression: richer, more structured, and more vibrant than the original release. Disgorged shortly before release, P2 2006 is bottled with low dosage, highlighting its crystalline purity.

Food pairings should reflect its layered intensity. Lobster with saffron butter, turbot with champagne sauce, wagyu tataki, duck with orange and spice, or aged hard cheeses like Comté are all superb matches. It’s equally brilliant with refined Japanese dishes where its precision and umami depth shine. Cellar potential is outstanding at 20 to 30 years from vintage, evolving slowly into even more honeyed, toasty, and savoury complexity.

Dom Pérignon’s Plénitude program reflects the belief that the wine undergoes three distinct evolutionary peaks over its lifetime: the first at around 8 years (the standard vintage release), the second around 15–20 years (P2), and a third at 30+ years (P3). The 2006 P2 is a perfect example of this philosophy, offering a vibrant, explosive interpretation of an already generous vintage.

Production is extremely limited compared to the original vintage release, and global allocations are tight, making P2 editions highly collectible among Champagne aficionados and fine dining programs.

Dom Pérignon’s “Plénitudes” reflect different peak expressions of the same vintage. P2 is the second, released after about 15 years on lees, where the wine gains remarkable energy and depth—like pressing pause on time and letting it gather momentum before release.
