Light to medium yellow colour, with a lovely nutty, nougat and creamy bouquet, with subtle aldehydes and a hint of spice from the 10% of new French oak. Meringue notes too. There's a saline effect on the palate which is intriguing. There is no real toastiness and the wine has great tension and persistence, refinement and focus. An outstanding blanc de blancs. (8 years on lees. Just 4 grams/litre dosage. Trophies for best sparkling at Perth and Adelaide this year)03 NOV 2017
