Machine-harvested at night, destemmed, 2 days cold soak, fermented in an 8-tonne swinging arm fermenter with cultured yeast, matured in French oak (30% new) for 18 months. Although its alcohol is modest, this has a warmth to the flavour profile. Mind you, the price is right, even if the new French oak alone added to the cost. The style will appeal to many.
