The fruit for the Paternus also comes from the Old Ulithorne Vineyard. Rose has recognised a particular parcel of Cabernet from this vineyard that is highly aromatic and has beautiful fine tannin structure along with dark summer berries and cassis. Once again the balance and structure that Rose has achieved in this wine is all about refinement and grace. Total production was 250 dozen.
‘80/20% from the Old Ulithorne Vineyard in the Onkaparinga Hills, the parcels kept separate, open-fermented, matured for 16 months in French oak (20% new). Bright crimson-purple; still to emerge as an adult, with bright fruits covering a wide spectrum of flavours, oak and tannins still to settle down. The balance is there, guaranteeing the long term future of the wine. I just hope the
cork makes the distance.’
