Two key factors give rise to the stylistic consistency that is the single vineyard Voices of Angels. The first is that 10-15 % whole bunch is used in the fermentation, the second is the inclusion of 3% Riesling off the same block and of the same vine age as the Shiraz. This has been the treatment of this fruit over the last 25 years. Ageing "sur lie" for the full maturation period, in 100% new French Oak, builds and richens the structure and mouth feel before settling to achieve natural clarification.
A mix of dark fruit fragrance and whole bunch character. Lovely quality cedar notes from the 100% new French oak are apparent. A finesse and elegance defines the palate, but there is density and definition. Single Vineyard - 97% Shiraz, 3% Riesling.
