3 parcels of fruit fermented on skins for 7, 14 and 21 days respectively, basket pressed to French and Hungarian hogsheads (25% new) aged on lees for 2 years with lees stirring every month. Bottled unfined and unfiltered. As expected, the colour is mid-amber and faintly cloudy; lots of aromas and flavours from fresh stone fruit to grilled peaches with cream, preserved lemons and aniseed, chalky acidity keeping it buoyant. And yes, plenty of tannin and grippy but well-handled and everything in its place.
