Winemaking notes

Fruit for this Riesling comes from both our own vineyard and Liopoto Springs vineyard which we lease. We picked both of these blocks of riesling in great condition when the fruit was showing lovely lime and floral aromatics with quite high acidity. The juice was fermented at low temperatures; one batch with an aromatic yeast strain and one with a neutral yeast strain. Following fermentation the wine was allowed to sit on gross lees for about 2 months to enhance the wines texture.

Tasting notes

This Riesling is a fine and delicate wine with lovely aromatics and a minerally palate. The nose displays aromas 

of lime leaf and jasmine with some spiced apple characters, whilst the palate shows mineral characteristics with fantastic fruit purity and steely acidity.

Riesling is a great match for Oysters. The citrusy acidity in the wine is like squeezing fresh lemon juice on the oyster enhancing their natural briney flavour.
