About 30 months in Slavonian oak cask (70%) and barrique (30%), followed by eight months in the bottle for the final ageing process. 
The elegance of the fruit comes through, as does the chewy intensity of the drying process: leather, resin, prune, raisin and a little tobacco and licorice. Sleek and silky, offering black cherry coulis and dried cranberry fruit notes, with silky tannins and accents of star anise, dried rosemary and sage that linger on the juicy, long finish. The mouth feel is richly textured and bold. If well maintained, the wine can be enjoyed for 25 years.
Roasted, grilled meat, game, aged cheeses (such as parmigiano or pecorino), risotto with amarone or red chicory. 15.5% alc/Vol.

Here is another beautiful wine from Franco Scamperle and the talented team at Le Salette. The 2015 Amarone della Valpolicella Classico La Marega is 70% Corvina and Corvinone with 30% Dindarella, Rondinella and Oseleta that sees five months of appassimento. You'll find slightly less residual sugar (with slightly less alcohol at 15.5%), which gives this wine more austerity and aromas that veer toward dark fruit, pressed blackberry, savory spice, mesquite and barbecue smoke. Try to find a ring of Bossolà or another sweet bread to serve here sliced along with Taleggio or Piave cheeses.

The single-vineyard 2015 Amarone della Valpolicella Classico La Marega shows hints of animal musk up front, yet quickly evolves into a fruitier display of crushed stone, clove and dried strawberries. It’s soft and fleshy in feel, with violet-tinged ripe red and black fruits and minerals coasting along a core of vibrant acidity. Energy remains high throughout the finale, even as a coating of fine tannin settles in, tapering off slightly chewy to hints of raspberry and inner florals.
