What started as a part time job to earn a few dollars during his university days turned into a committed obsession. Michael worked in the family owned winery, Kooyong, spending time out in the vineyard, in the winery and on the road and the net result was a desire to make this his career.Following the sale of Kooyong Michael went into business with his parents to form Ocean Eight taking on the role of Winemaker and General Manager.To complete his education Michael undertook several study tours of France, concentrating on the hallowed vineyards and cellars of Burgundy.

Whilst he makes Mornington Peninsula wines he has applied the most salient Burgundian techniques to take the wines to another level. In 2011 Michael won the highly coveted “Young Gun Of Wine” award. Leading wine writers Max Allen, Philip Rich and Nick Stock judged this competition.

Ocean Eight Verve Chardonnay is inspired by the wines of Chablis, and having tasted this wine recently Chablis influence is clearly evident on this striking Mornington Peninsula Chardonnay. Interestingly the grapes for this wine are the earliest picked on the Mornington Peninsula. The vineyard is one of the most northerly on the Mornington Peninsula landmass. It is ideally located for the growing and ripening of the Verve style.
Yields for this wine fell below 2.0t/acre, resulting in limited volume of chardonnay produced.
Over the years the style of the ‘Verve’ Chardonnay has been honed and it is now firmly entrenched as one of Australia’s most distinctive and distinguished examples of the greatest white wine grape variety. 
The fruit is picked 2 weeks earlier than any other vineyard on the Mornington Peninsula, to capture the racy grapefruit & lemon flavours in the ripening cycle, and only old barrels are used for vinification to highlight the vibrancy of the fruit from our vineyard.
The Verve shows distinctive grapefruit & lemon on the nose alongside some mineral components. The palate almost gives you the illusion of richness due to the intensity of the fruit, then the crisp, dry finish kicks and lingers in an extended aftertaste. It drinks beautifully in its youth, as a fresh & vibrant Chardonnay. With age this wine will develop further toffee and honey flavours. 
Drink over 10yrs+ with seafood.
