Chilled overnight to around 8 degrees C, whole bunches loaded into the press, rotated a few times and after 3 hours 500l/t pressed to tank, the remaining 120l/t to used French puncheons. Very few roses on the market would have as much winemaking effort as that invested in this wine. It is complex and savoury, with flashes of spice, and has a long, dry finish.
