Maturation for 12 months in old oak barrels. Malolactic fermentation is encouraged during the maturation. Fining with Bentonite is followed by filtration before wine is ready for bottling. Matured in bottle for 24 months before released.
The Aylward Chardonnay is a new label for Ocean Eight to highlight Mike Aylward’s belief that Chardonnay has a special affinity with the land and climate of the Mornington Peninsula.
Made in a tiny volume, the Aylward is opulent, rich and seamlessly harmonises the perfect ripeness from 2019 of white stone fruit & honeyed lemon. The mouthfeel is luscious but is kept in check by the reliable acidity achieved by fortunate growing conditions and pitch perfect picking times.
