Made at Yering Station, Toolangi's fluently juicy entry point Pinot Noir is as vibrant, fresh and as "Yarra" as always. 100% destemmed, cold soaked for five days prior to fermentation, fermented in open top fermenters and plunged once daily. Malolactic fermentation took place in barrels and the wine was matured for ten months in 100% French oak (10% new oak and the balance in one, two and three-year-old 500-litre puncheons). Toolangi do Pinot, and they do it well. The new release is all subtle berry and red cherry fruit, understated oak influence and vibrant, Yarra vivacity.
