Screwcap. Defaix's Chablis villages is drawn from four parcels of mature, 30+ year old vines, situated around Milly and Poinchy, on the left bank of the Serein river. The wine is fermented wild, and aged on fine lees for ten months in glass-lined tanks. While quantities are again small this year, the quality is simply superb, with the wine reflecting the more classical structure and salinity of the vintage (a contrast to last year’s wines). Packed with racy, mouthwatering fruit, this also has a wonderful, saline tension. A terrific Chablis and another outstanding value from Sylvain and Didier Defaix.
