Silvio Denz's 2017 Lafaurie-Peyraguey is rich, tropical and unctuous, and yet also manages to retain a terrific amount of freshness. White and yellow flowers, passion fruit, mango and orchard fruit are some of the many nuances that develop in the glass, but it is the wine's total sense of balance that makes the deepest impression. A wine with fresh, clean botrytis influence and lemon curd, sliced apricot, dried apricot and apricot confiture. This has striking purity with such intense flavors of peach and apricot custard, apricot pastry and a very elegant and supple, fleshy-fruit texture with acidity that holds such freshness on the finish. Elegance and freshness meets power and purity. Concentrated in every respect – flavors, sugar and acidity. Drink now or age for a considerable time, as you prefer.
Although it can be drunk young,it is much better as it approaches maturity, between 15-40 years of age.As with all Sauternes temperature is more important than anything else. Best served at 14 degrees Celsius. It can be served with seafood, especially shellfish, lobster, crab and oysters on the half shell. It can also be paired with spicy roasted chicken, veal and pork dishes.
