Domaine Jean Marc Pavelot is widely regarded as one of Savigny’s benchmark producers, known for traditional élevage, low yields and wines that balance purity of fruit with age worthy structure. The limestone and marl soils of the Côte de Beaune give lift, fine tannin and savoury detail, producing a style that sits beautifully between elegance and quiet depth.
The colour is a bright ruby with garnet hues. Aromas are open and inviting, showing red cherry, raspberry and wild strawberry, followed by rose petal, gentle spice and a touch of forest floor. The palate is medium bodied and finely shaped, with pure red fruit, silky tannins and a fresh acid line that gives flow and energy. There is a subtle savoury and mineral edge through the finish that adds complexity and excellent food appeal.
