Fiano is a variety that originates in Campagna Italy, climatically well suited to McLaren Vale, particularly as it retains excellent levels of natural acidity as the fruit ripens. Fiano has relatively small berries and thick skins perfect for creating a style with plenty of structure and texture.
Andy Coppard, winemaker, worked with the naturally generous phenolics by incorporating skin contact during fermentation and oxidatively handling the juice prior to barrel fermentation in old French oak. The result is a wine of fresh natural acidity, citrus and almond meal flavours with a full textural mouth fell.
