Only the best two-tonnes of fruit is used for our single-site Pinot Noir. Fruit intensity is key with the emphasis on small bunches. The 777 clone was picked on 4 March and the 114 and 115 clones on 10 March 2018. All clones were vinified separately in small batches. The select fruit then had ten months élevage (French oak, 35% new barrique from Taransaud) before careful blending.
The 777 clone adds the prettiness of wild strawberry to the denser fruit flavours of the 114 and 115 clones, giving layers of silky tannin. Approximately 30% of the fruit was whole bunch, lending a savoury note. The wine is unfined and unfiltered, and was racked twice: once off solid lees, once to bottle. Bottling was in late January 2019.
Lovely bright ruby hues. The nose is already complex with dark fruit notes mixed with hints of dried summer grass and earthy aromas. The palette has a lingering resonance and is of cherry, spice and summer pudding. The wine is soft with well-integrated oaks and tannins.
