Handpicked, whole bunch pressed and naturally fermented in tight grain 500L French oak puncheons (20% new). Matured on lees for 11 months, without malolactic fermentation proceeding until bottling in late January 2019.
The wine is intense and complex with pristine peach and citrus fruit, subtle toasty oak and great depth of flavour, all tightly wrapped up in refined minerality. This is length and poise vinified. It will develop even more if cellared for another 2-3 years. Makes a flawless pair to smoked salmon and feta tartlets.
