2019 Parker Estate Cabernet Sauvignon, Coonawarra

From the heart of Coonawarra’s terra rossa strip, Parker Estate has long been one of the region’s benchmark producers, known for Cabernet that leans toward structure, perfume and longevity. Founded by John Parker in 1985 and now under the guidance of winemaker Courtney Benham, the estate continues to draw on exceptional vineyard holdings where red soils over limestone deliver both power and finesse.

The 2019 vintage in Coonawarra produced wines with depth and balance, a season that allowed Cabernet to ripen fully while retaining its natural line. The result here is a wine that captures classic regional character with a slightly more polished, modern edge.

Deep crimson in the glass, the aromatics are immediately recognisable as Coonawarra. Blackcurrant and dark cherry sit alongside bay leaf, mint and a gentle herbal lift. Layers of cedar, tobacco and a hint of dark chocolate add complexity, with that subtle earthy note that speaks to the terra rossa soils.

The palate is structured and composed, with cassis and plum carried by firm, fine grained tannins. There is a savoury thread running through the wine, with notes of dried herbs, spice and a touch of graphite building through the mid palate. A line of acidity keeps everything focused, leading into a long, persistent finish.

This is a natural partner for dishes with richness and depth. Roast lamb with garlic and rosemary, grilled beef, or slow braised dishes all sit beautifully alongside its structure. It also pairs well with aged cheeses, where its tannins and acidity cut through.

Drinking well now with a decant, though it will reward patience over the next ten to fifteen years as it softens and develops further complexity.
