Coonawarra’s narrow strip of terra rossa over limestone has a habit of turning Cabernet Sauvignon into something both structured and unmistakably elegant, and Rymill has been part of that story since the early 1970s. Founded by John Rymill, whose family helped pioneer the region, the estate has always leaned toward a classic, age worthy style. The Maturation Release range is exactly what it sounds like, wines held back in the cellar until they begin to show the early stages of development, taking the guesswork out of cellaring.

The vineyards sit in the heart of Coonawarra, where cool maritime influences from the Southern Ocean stretch the growing season and preserve that hallmark line of acidity. The soils, rich red loam over limestone, bring structure, perfume and that signature regional note that Cabernet lovers chase.

Colour is deep garnet with a slight brick edge beginning to appear. Aromatically it moves beyond primary fruit into something more layered, blackcurrant and dark plum alongside cedar, tobacco leaf and a touch of bay leaf. There is a gentle earthy character emerging, with hints of graphite and dried herbs adding complexity.

The palate shows why patience pays off. Tannins have softened into a fine, dusty frame, wrapping around cassis, mulberry and savoury spice. Oak has melted into the wine, leaving behind subtle cedar and cigar box notes rather than anything overt. The structure is still very much intact, but everything feels harmonised, long, composed and quietly persistent.

This is a natural partner for dishes with depth and richness. Slow braised beef short ribs, roast lamb with rosemary and garlic, or even venison with juniper all sit beautifully alongside its savoury profile. Aged cheddar or a well matured Comté also works a treat.

Ready to drink now with all that secondary character starting to shine, though it will comfortably hold for another decade as those earthy, tertiary notes continue to build.
