Very light salmon-pink colour, very pretty to regard; the bouquet is dried rose petals, pot-pourri and a little quince-paste. Youthfully fruity. The philosophy at Apogee is simple; produce single vineyard wines from the best small holdings of no more than 2Ha., using Pinot Noir, Chardonnay, Pinot Meunier and Pinot Gris that Pirie has personally selected to make the finest sparkling wines available from Tasmania.
Light salmon pink with fine mousse and a suitable foamy collar when poured. Distinctively secondary aromas are part of Apogee style, induced by our oxidative juice handling. Cherry liqueur, raspberry compote, and salty mineral- apple. A touch of coffee from the oak. Mid-weight palate but surprising flavour richness on the mid-palate due to the high pinot noir content from this special part of the vineyard. Chardonnay freshens the finish with its citrus tang.
