Argyros Assyrtiko Cuvée Evdemon is a remarkable expression of Santorini’s most iconic grape, Assyrtiko. Domaine Argyros, one of the island’s most respected wineries, was founded in 1903 and has built a reputation for producing some of the finest Assyrtiko wines in Greece. Sourced from extremely old, ungrafted vines—many over 150 years old—Cuvée Evdemon is a rare and handcrafted wine that showcases the power, minerality, and elegance of Santorini’s volcanic terroir. Made with minimal intervention and a natural winemaking approach, this cuvée is a pure reflection of place.

Pale gold in color with brilliant clarity, the nose is complex and layered, offering aromas of citrus blossom, lemon zest, and ripe stone fruit, interwoven with notes of wet stone, sea spray, and a subtle smokiness from the volcanic soils. The palate is electric, with racy acidity providing incredible tension and structure. Flavors of green apple, Meyer lemon, and white peach are balanced by a deep saline minerality, leading to a long, mouthwatering finish with hints of flint, crushed rock, and a touch of almond.

This Assyrtiko pairs beautifully with grilled seafood, oysters, and ceviche, as well as traditional Greek dishes like grilled octopus and lemon-infused lamb. Its mineral-driven intensity also makes it an excellent match for sushi, truffle risotto, or aged cheeses like Graviera and Comté.
