2020 Ashton Hills Sparkling Rose, Adelaide Hills

Pinot Noir fruit for the Ashton Hills Vintage Rosé is sourced from a single vineyard lying in the Piccadilly Valley – a particularly cool, wet and humid part of the Adelaide Hills. An area well-suited to producing crisp, finely-flavoured sparkling wines.

Attractive salmon hue. Aromas of fresh strawberries and raspberry coulis, with slight brioche and biscuit notes. Crunchy and red fruited, the palate is fresh and vibrant with a lovely acid line. Bottle fermentation is evident in the complex, creamy finish, and the fine bead of bubbles. The low dosage keeps the wine dry and crisp.

Ashton Hills Sparkling Rosé from the Adelaide Hills is a refined expression of Pinot Noir, crafted by winemaker Liam Van Pelt. Founded in 1982 by Stephen George, Ashton Hills has established a reputation for producing exceptional cool-climate wines, particularly Pinot Noir. The vineyard is situated in the Piccadilly Valley, a sub-region known for its cool, wet, and humid conditions, ideal for cultivating high-quality Pinot Noir. 

The Sparkling Rosé is produced in limited quantities, reflecting the winery's commitment to quality over quantity. On the nose, it offers lifted aromas of fresh strawberry and cranberry, with hints of rose petal and creamy biscuit notes. The palate is characterized by crunchy fresh raspberries and stone fruits, delicately balanced with a creamy, supple mouthfeel from the bottle fermentation. A low dosage contributes to a crisp, clean finish, making it a refreshing and elegant sparkling wine. 

This Sparkling Rosé pairs beautifully with a variety of dishes, including seafood, light salads, and soft cheeses, making it a versatile choice for various occasions. Its balance of fruitiness and acidity also makes it an excellent aperitif.
