This is an extraordinary, fine and restrained wine. The perfume offers gentle notes of grapefruit, white peach, sage, and boxwood, while the palate is fine-boned and incredibly delicate and floral, shot through with zesty, salty, crystalline freshness. The bubbles are very gentle. It’s a wine more than capable of expressing itself with complex food and especially salty foods. Of course, it can work with the classics—hazelnut-based desserts, fruit and cream tarts etc.—but it also has the intensity and mineral drive to partner with all kinds of savoury foods à la a good Mosel Spätlese.
At the Ca’ d’Gal ristoro they match this with everything from cured meats, foie gras, cured fish and Brös, the tangy ricotta and grappa specialty of the region.
Ca’ d’Gal Moscato d’Asti Canelli Sant'Ilario is a beautifully crafted wine from Piedmont, Italy, produced by Ca’ d’Gal, a winery dedicated to showcasing the true expression of Moscato. Located in the Canelli area, known for its ideal conditions for Moscato grapes, Ca’ d’Gal uses traditional methods and a meticulous approach to produce wines with elegance and aromatic intensity. The Sant'Ilario vineyard, with its unique terroir, lends this Moscato d’Asti its distinctive floral and fruity character.
This Moscato d’Asti has a delicate sweetness and low alcohol content, with aromas of white peach, orange blossom, and honeysuckle. On the palate, it is light and refreshing, featuring flavors of ripe pear, apricot, and a hint of honey, balanced by a gentle sparkle. The wine’s lively acidity and floral finish make it an ideal choice for pairing with desserts, fresh fruit, or as an aperitif.
