High in the Gualtallary district of the Uco Valley sits the Adrianna Vineyard, often described as the Grand Cru of South America, and Mundus Bacillus Terrae is one of its most singular expressions. The Catena family, led by Laura Catena with Alejandro Vigil in the cellar, has spent decades mapping this site metre by metre, uncovering soils rich in limestone and ancient marine deposits. The name, meaning “elegant microbes of the earth,” points to the living soils that shape this wine’s unmistakable character.
The aromatics are strikingly complex and deeply layered. Black cherry, cassis and wild blackberry form the core, but they are immediately lifted by violet and lavender. Beyond the fruit sits a distinctive savoury and mineral spectrum, crushed stone, graphite, a touch of iron and subtle herbal notes, all hinting at the vineyard’s unique composition. There is spice too, clove, cocoa and a faint smoky nuance, woven seamlessly through the wine.
On the palate it is powerful yet incredibly precise. Full bodied, but carried by a fine, chalky tannin structure that feels almost architectural. The fruit is dense and concentrated, yet never heavy, held in place by bright, high altitude acidity. Flavours move from dark berries into a long, mineral driven finish, where notes of stone, spice and a subtle saline edge linger. It is a wine of tension as much as richness, a rare combination in Malbec.
Winemaking is meticulous, hand harvested fruit, careful selection, native fermentations and élevage in French oak, all designed to preserve the identity of the vineyard rather than impose a style. The result is a wine that feels both monumental and detailed, a true reflection of place.
At the table it deserves dishes with equal depth. Grilled ribeye, slow roasted lamb or game all work beautifully, and it also pairs with rich, earthy flavours where the wine’s structure can stand alongside.
This is built for the long haul. While it will open with air now, fifteen to twenty years in the cellar will see it evolve into something even more complex, with notes of truffle, leather, spice and a deeper mineral character emerging over time.
