This is a blend of 90/10% chardonnay/pinot noir. The wine spends around three years on lees and holds around five g/L dosage. Quite rich and round, supple and yet delivering electric acidity and tight, tiny bubbles for refreshment. Vanilla cream, cinnamon, red apple, lemon-lime iceblock scents and flavours with a touch of general sea spray/briny minerality in tow. Despite the generosity of flavours it remains quite compact on the palate, too. Somewhat of a delicate touch here, but with all the goods.
