90-year-old vines on typically volcanic soils. Handled in large format oak, rather than the steel tanks of other properties. This confers a dried straw quality, not dissimilar to the scents of freshly laid tatami mat. Glazed quince, white pepper, jasmine and crystalline ginger, to boot. Wonderful intensity and spread of fruit, with the low sulphur regime playing a trump card of mellifluous drinkability. Drink or hold.
The name comes from the volcanic hill where the vineyards are located, a relatively warm site at 180 metres. Average vine age is 90 years. Hand-picked grapes are soft-pressed and left on skins for a brief period before fermentation without sulphites, partly in stainless steel, partly in 228-litre French oak casks at least three years old. There is no malolactic fermentation and the wine is left on lees for at least eight months.
