It's sauvignon blanc Jim, but not as we know it. Light straw with aromas of guava, feijoa, grapefruit, gooseberry and waxy lemon with hints of clotted cream, crushed stone, candle wax, honeysuckle, flint and dried honey. Quite expansive and complex with some roast chestnut, grapefruit and lightly spicy complexity, finishing stony dry with notes of drying hay and citrus fruits.

This wine was made from grapes grown in the The St Matthias vineyard of Tasmania's Tamar Valley.
It was made to style wise sit somewhere between a typical sauvignon blanc and and those often referred as a fumé blanc (with various methods and degrees of oak influence). Texture and structure are the paramount considerations for the winery team, and a lot of effort is put in to produce a wine that is interesting, funky and complex, while
remaining approachable. 2020 was challenging season in the Tamar Valley vineyards in nearly every aspect, but the hard work during the prolonged harvest enabled good flavour and intensity in the final wines.
The wine includes both free run and pressed fractions, combined before being sent to old French oak. Fermentation took place with ambient yeasts. Malolactic fermentation was not allowed. The wine rested in barrels for seven months. The wine was fined and filtered ahead of bottling.
The winery recommends drinking this wine between 2024-2035.
