Bouley has produced a succession of banner vintages in recent years, but his 2021 Volnay 1er Cru Les Caillerets is especially striking in this more challenging season. Wafting from the glass with notes of sweet raspberries and plums mingled with rose petal, potpourri, exotic spices, bergamot and wet stones, it’s medium to full-bodied, supple and seamless, with an unctuous core of fruit and a suave, ethereal, melting profile, concluding with a long, saline finish. This is one of the most sensual, refined wines Bouley has produced to date.
