Winemaking is geared toward structure and longevity. Long maceration builds formidable tannin and colour, and extended ageing allows the wine to settle without softening its spine. The philosophy is patience, crafting a red that is meant to evolve over years rather than charm immediately.
Deep garnet in colour, the aromas open with black cherry, plum and blackberry layered with smoke, dried herbs and iron rich earth. There is a ferrous, volcanic edge that gives the wine its identity. The palate is full bodied and tightly wound, with dense dark fruit wrapped in firm, chalky tannins and bright acidity. Flavours of black fruit, spice and savoury mineral notes drive through a long, gripping finish.
It pairs beautifully with braised meats, game, lamb and slow cooked dishes. While already fascinating with air, it will cellar confidently for fifteen to twenty years, developing leather, truffle and earthy complexity.
