Traditional wine, as it has always been done, with the classic refermentation in the bottle and rest on the yeast. The sediment on the bottom gives off complex notes of bread crust which combine with the typical fruitiness. Dry, dry wine, with a pleasantly bitter finish, typical of Surlie. Long-lived longer than you might expect. Ideal at the table.

The Glera grape, from which the starting base is obtained, is grown exclusively in our own vineyards. The choice of bases is made from year to year to obtain the desired characteristics and consistent quality.

The grapes are harvested by hand and vinified separately for each individual vineyard. The pressing is soft and the must, after an initial static clarification, is fermented in steel at 17-19 °C.

Once the first fermentation is finished, the wine is left to rest on the fine lees, with very little decanting. After about 5 months we proceed with the rough filtration and the assembly of the bases, and subsequently with the refermentation, which is done in the bottle in the traditional period of spring, in the two weeks preceding Easter. Fermentation stops automatically once the residual sugars have run out, leaving a deposit of yeast at the bottom of the bottle.

After a refinement of 2-4 months the wine would be ready for consumption, but our choice to leave it in the bottle at least until the beginning of the year following bottling is aimed at achieving greater balance, a surprising intensity made of elegant primary notes combined with the evolutionary complexity that the yeast gives to the wine.

The crown cap guarantees tightness and practicality, and together with the yeast and the absence of sugars make this wine incredibly long-lived, capable of being appreciated even after 5-6 years in a crescendo of complexity and maturity.

We recommend serving the wine clear, preferably in a carafe to promote oxygenation, but it can also be consumed with the yeast in suspension.
