Of all the ’21 Moorooduc Estate pinots, this has the most structure and a different tannin profile. Not surprising given that it is 100% whole-bunch fermented. It’s also super fragrant. Plenty of twiggy, woodsy tones infusing the dark spiced cherries and red plums, leafy freshness with chinotto and radicchio, smoky, woody char too. Lots going on and fans of the style will be stoked.

Bright garnet in colour, the nose displays beautifully integrated aromas from the whole bunch fermentation. Aromas of dark wild cherry, morel mushrooms, earthy notes and dark red roses dominate. Pomegranate and orange dominate the palate. The wine has firm and fine tannins, lovely balance and length. Delicious! Pair with a large plate of perfectly seared frenched lamb cutlets – the Italians call them ‘scottaditti’ – translating as ‘burn your fingers’!
