Rymill Classic Shiraz from Coonawarra is a beautifully balanced red that reflects both the elegance of the region’s cool climate and the richness of its famous terra rossa soils. Produced by the Rymill family, whose winemaking heritage in Coonawarra stretches back generations, this Shiraz showcases a refined take on the variety — vibrant, medium bodied and layered with spice, fruit and subtle oak. It’s a wine that captures the essence of Coonawarra’s terroir while remaining generous and accessible.

The grapes come from estate vineyards that sit on the ancient terra rossa strip over limestone, providing excellent drainage and natural concentration of flavour. The cool southerly breezes from the Southern Ocean extend the ripening season, allowing for the development of complex aromatics and fine tannins. Fermentation takes place in stainless steel with regular gentle plunging, followed by maturation in French oak barrels to bring texture and spice without overshadowing the fruit.

In the glass it shows a deep crimson hue with purple reflections. The aroma is bright and inviting, revealing blackberry, dark plum and cherry alongside notes of black pepper, cedar, mocha and a hint of violet. The palate is smooth and medium bodied, with juicy black fruit flavours supported by supple tannins and well-judged acidity. A touch of oak adds warmth and structure, leading to a long, savoury finish with echoes of spice and cocoa.

It pairs beautifully with grilled lamb, barbecued ribs, roast beef, or hearty pasta with tomato and herbs. It also works well with aged cheddar or mushroom dishes. Enjoy it young for its generosity and freshness, or cellar for up to ten years to develop earthy, peppery complexity.
