Founders Chris and Kathryn Hermann, lifelong Burgundy devotees, created 00 Wines with the intent of bringing Grand Cru-level detail and discipline to Oregon’s volcanic soils. Their winemaking philosophy leans entirely into low intervention: natural fermentations, gravity flow, and extensive aging on fine lees. EGW is fermented and matured in custom French oak barrels – shaped, toasted, and coopered specifically to enhance texture and energy rather than overt oak influence.
Winemaker Wynne Peterson-Nedry draws on deep experience with both Oregon and European styles to produce a Chardonnay that balances bright citrus and orchard fruit purity with saline minerality, gentle brioche notes, and an almost chalky, Chablis-like finish. The tension in the wine comes from the Van Duzer Corridor’s cooling influence, which slows ripening and locks in acidity while allowing phenolic development.
