Arnaud Baillot is part of a new wave of Burgundian négociants who are keeping things small, precise and very focused on site. Based in Beaune, he works closely with growers across the Côte d’Or and surrounding areas, selecting fruit parcel by parcel and handling it with a light touch in the cellar. The aim is clarity and drinkability, wines that feel true to their origin without being overworked. From the higher, cooler reaches of Burgundy, this Hautes Côtes style Chardonnay leans into freshness and lift. Citrus and green apple come forward straight away, backed by a gentle note of pear and a hint of white blossom. There is a fine mineral thread running through it, more chalk and stone than richness, giving the wine its backbone. The palate is bright and energetic, with crisp acidity carrying the fruit cleanly across the tongue. It is light on its feet but not thin, with just enough texture to round things out. Flavours stay in that citrus and orchard fruit spectrum before finishing dry, refreshing and quietly persistent.
This is made for simple, well chosen food. Grilled whiting with lemon, prawns straight off the barbecue, or a roast chicken with herbs all fit beautifully. It also works well with fresh salads, goat’s cheese or lighter vegetarian dishes where the acidity can lift the flavours. Best enjoyed young while its vibrancy is front and centre, though a couple of years in bottle will soften the edges and bring a touch more savoury nuance.
