The majority of the old vines are Shiraz with smaller blocks of Chardonnay, Marsanne, Roussanne, Viognier and Mourvedre. Winemaker Nick is making stellar five-star wines at Château Pâto that are produced in tiny quantities. We are grateful to get our handson small quantities of these modern Hunter Wines.
The Chardonnay fruit was sourced from two different plots of Chardonnay. One on dark alluvial soil in Pokolbin and the other from a sloping sand based site in Broke (Vine age - 25 years and 15 years respectively). The juice was fermented in 2 and 3 year old large format French oak.
The resultant wine is lime green/straw colour. It is very aromatic with notes of grapefruit and citrus with a supporting background from the lees and oak. It is elegant yet fleshy, with layered with complex ferment elements, land ovely lees texture. The wine has great acidity & minerality to finish Drinking now and next 2-3 years.
