Daniel Dampt is one of Chablis’ most celebrated producers, making wines both under his own name and that of Jean Defaix, his father in law. The house style produces clean, ultra-pure, wines with bright steely acidity and not so much as a hint of oak. Working with his two sons, Vincent and Sebastien, who have worked in New Zealand and Australia, the family produce clean, ultra-pure whites with bright steely acidity and not so much as a hint of oak. They craft wines that are true to the history of the region and reflect the rich heritage of the Defaix name.
This premier cru is rich with mineral, apple and melon flavours and the waxy texture combined with balanced acidity which shows us how good Chablis can be. The bouquet has a striking smoky, mineral character. The palate shows high acidity, plenty of mineral complexity and a touch of honey. A rich, full style with good acidity.
