Oates Ends Chardonnay from Margaret River is a refined, beautifully textured white that reflects the finesse and purity for which this region is renowned. Crafted by winemaker Cath Oates, who draws on her experience both in Australia and internationally, this single-vineyard Chardonnay showcases a restrained, modern style driven by precision, acidity and a strong sense of place.
Sourced from mature vines grown on gravelly loam soils in Wilyabrup, the fruit is hand harvested and whole bunch pressed before wild fermentation in French oak barrels, typically with a modest proportion of new oak. Partial malolactic fermentation and extended lees ageing build depth and mouthfeel, while preserving freshness and mineral drive.
The nose is elegant and layered, with aromas of white nectarine, citrus blossom, struck match, grilled cashew and a subtle saline edge. The palate is medium bodied and focused, showing lemon curd, stone fruit, wet stone and creamy oak integration. There's fine acidity and a long, savoury finish that speaks to both careful winemaking and the strength of the site.
Food pairing: pairs beautifully with roasted spatchcock, seared scallops, creamy polenta with mushrooms, or grilled lobster with lemon butter. Also excellent with firm cheeses or poultry in white wine sauce.
Cellar potential: drinking well now with a decant, but will evolve gracefully over 6 to 10 years, developing hazelnut, toast and savoury depth.
