Inky and black in the glass. Super-ripe aromas of prune, stewed plum, pudding, spice, ferrous earth and dates. Big and brawny on the palate, full of plum, mulberry, mocha and spice flavours. A wine that captures the Heathcote shiraz personality so well: bold in colour and character and yet exuding an innate elegance. Fruit, oak and tannins work in harmony right from the get-go. Heady aromas of blackberry, bramble, aniseed, sage and dried cranberry. On the palate an earthy, mineral element combines with fine-cut tannins to control the 15% alc., meshing nicely with ripe fruit and gentle, spiced oak to produce a seamless beauty of a shiraz.

Emily’s own label, named after 14th century theologian and philosopher William of Ockham’s views of “less is more” - applicable in wine-making as minimal intervention. A fabulous wine grown on granite based soil, to compare with the basalt derived Jasper Hill wines. Exhibits savoury up-front fruitiness, elegant raspberry, cola and dark chocolate characters. Delicious now and cellarable. Again, the 15.0% alc/vol doesn’t show.
