Angullong Fossil Hill Sangiovese is a vibrant and savoury expression of this classic Italian variety, grown in the cool, high-altitude vineyards of Orange in New South Wales. Situated on the ancient slopes of the Great Dividing Range, the Angullong vineyard lies between 600 and 650 metres above sea level, where the combination of altitude, volcanic soils, and a long ripening season offers a perfect environment for Sangiovese to thrive.

The Fossil Hill range highlights select parcels of fruit from the estate’s most expressive sites, with the Sangiovese block planted to capture optimal sunlight during the day and cool airflows at night. This allows the grapes to develop bright cherry fruit and Sangiovese’s signature tannic structure without overripeness. The soils—rich in limestone, shale, and ancient marine fossils—lend the wine its mineral edge and sense of place.

In the winery, the fruit is fermented in stainless steel to preserve vibrancy and aromatic lift. It then undergoes maturation in seasoned French oak barrels to soften the edges and add gentle complexity without imposing heavy oak flavour. The result is a wine that speaks of both variety and region—bright, savoury, and refreshingly honest.

In the glass, it shows vivid aromas of sour cherry, redcurrant, dried rose petals and hints of blood orange, with undertones of leather, earth and dried herbs. The palate is medium-bodied and textural, with firm yet fine tannins and a backbone of natural acidity that drives through to a long, savoury finish. It’s a wine that’s more about shape and energy than sweetness or opulence.

This Sangiovese is made for food. Pair it with tomato-based pasta dishes, grilled lamb with rosemary, chargrilled vegetables or eggplant parmigiana. It also works beautifully with hard cheeses and charcuterie, and is particularly good slightly chilled in warmer months.
