A wonderfully creamy, expressive chardonnay from the Tamar Valley; barrel fermented wild, 15% new french oak, 25% mlf, nine months on lees. Light straw in the glass with juicy white peach, nectarine and citrus fruit tones cut with hints of clotted cream, wildflowers, poached pears, custard, apple turnover and crushed stone. Creamy and textural with a lemony purity and wonderfully transparent, detailed vibe as it slowly trails away.

Aunt Alice Ocean Chardonnay from Tasmania is a fresh, textural and finely balanced cool-climate white that channels the pristine maritime influence of the island. Where the Night Sky Pinot Noir captures Tasmania’s elegance and perfume, the Ocean Chardonnay reflects its mineral-driven precision and long growing season.

The fruit is sourced from carefully selected Tasmanian vineyards close to the coast, where sea breezes temper summer heat and ensure slow, even ripening. This maritime influence gives the wine its hallmark freshness and saline edge. Grapes are handpicked, gently pressed, and fermented with wild yeasts. Ageing is in French oak barriques, mostly older, which adds texture and complexity without overwhelming the purity of fruit.

In the glass, Ocean Chardonnay has aromas of white peach, lemon curd and nectarine skin, lifted by citrus blossom, crushed stone and a faint hint of hazelnut. The palate is taut yet layered, combining bright citrus and stone fruit with savoury leesy texture, a whisper of oak spice, and a long, salty finish. It’s a wine that shows restraint and finesse rather than overt richness, in keeping with Tasmania’s best Chardonnays.

Food pairings lean toward the delicate and ocean-inspired: oysters with mignonette, grilled scallops, pan-fried flathead with lemon butter, or a saffron seafood risotto. It also complements creamy vegetarian dishes such as pumpkin and sage ravioli or a celeriac gratin. Cellaring for 5–8 years will add depth, hazelnut richness and honeyed complexity while retaining its fine acid line.
