The brothers work organically in the vineyard, focusing on perfect fruit balance and low yields. These old vines naturally produce small, concentrated berries with thick skins and vibrant acidity. Harvesting is done by hand and the grapes are sorted with great care before fermenting with gentle extraction to preserve perfume and fine tannins. Ageing takes place in French oak, with only a modest portion new, chosen to refine the wine’s texture while keeping its Burgundian purity intact. Their approach is all about intention, restraint and allowing the vineyard to speak.
