Nathalie and Gilles Fevre farm their vineyards sustainably in the heart of Chablis, with a strong focus on expressing site and soil. Their parcels are planted on Kimmeridgian limestone—fossil-rich soils that are the secret behind the region’s electric minerality and saline edge. The vines are mature and carefully tended, producing fruit that needs very little in the way of manipulation.
Fermented and aged entirely in stainless steel, this Chardonnay stays on fine lees for added texture and complexity, without any oak to distract from the purity of fruit and terroir. The result is a wine that’s all about clarity and tension.
In the glass, it opens with aromas of green apple, lemon peel, white flowers, and crushed stone. The palate is taut and focused, with citrus and orchard fruit flavours supported by a flinty, savoury edge and a long, zesty finish.
It’s a brilliant match for shellfish, fresh cheeses, or anything involving a creamy lemon sauce. A pure expression of Chablis made with precision and care.
